Cooking Of Dhaba Style Masala
Keep cooking! Let’s add spices to the masala! I’m using this for a long time, coriander powder! Add turmeric, don’t add chili powder now. Cook the coriander a little bit more!
I’ll add chili later because I don’t want the chili powder to get burnt! Slightly roast coriander and turmeric!
When you start smelling the aroma of cooked coriander, and when the off smell of raw turmeric disappears add chilies to it. This is red chili powder. Then add chopped tomatoes.
You can call it chopped tomatoes or tomato puree, call it whatever you want! This is the basic dhaba masala. Keep cooking this ladies and gentlemen! It’ll taste better if you keep cooking it. Do not cover it. You’re supposed to cook it.
I’m not going to add salt to this because I have added enough salt to create friction! That’s why there is enough salt in this! Salt is supposed to make the masala lose its water and the salt in this masala is already doing that.
Let the salt do its work! The masala has been thoroughly cooked!
I poured water when it started releasing fats. When you add water after cooking the masala, it makes the flavors more mellow. It will be bittersweet and beautiful!
